BIOGRAPHY OF AMOS AND IVAN HILBORN, PROPRIETORS of the HEW DUNDEE FLOUR MILLS (1901 - 1963) as told to Alice Hallman Wallace on July 12, 1972 by her uncle, Ivan Milford Hilborn. Amos Hilborn with wife Laura and daughter Mary. Mrs. Hilborn was a former President of the New Dundee Womens Institute, My father, Amos Hilborn, was born January 7, 1858 and was the second of nine sons of Jacob and Caroline Witmer Hilborn. He learned the milling trade when working for E. W. B. Snider at New Dundee, Mr, Snider later became one of the fathers of Ontario Hydro, Because two of my uncles were alao inter-ested in learning the trade, grandfather Hilborn traded the family farm at Conestoga for the Blair Mill. Four of the nine sons became millers. Father married Veronica Biehn Saltzberry whose grandmother Mary Biehn had been the first white baby born in Waterloo County. To this marr-iage were born five children: namely, Carrie, Gran-son, Ivan, Laura and Lloyd. I was born May 30, 1887, in Blair, in the little house next to the mill. Father first came to New Dundee when hired by E, W. B, Snider, After his marriage in 1880, he moved into the house occupied by Jack Schmidt (Kenneth Brighton 1972), which orig-inally stood at the corner of South and Mill Streets, next to the mill. A new house was built in I906 after he returned in 1901 to live in New Dundee the second time. My dad was a great man for partnerships. His first venture was with a Mr. Hembly at Salem, Remaining there a few years he then removed to Ayton about 1890 where he worked for Winger Milling Company, The fourth child Laura was born at Ayton. Here we lived for approximately three years, One Saturday night the mill burned. The Winger Brothers didn't build for a few years so father got a job in a mill at Neustadt. This was temporary as it didn't suit his liking. He then formed a partnership with Henry Brubacher in Berlin (Kitchener), and took over the City Mills. He rented the mill at the corner of Cedar and King Streets (Peter E. Weber) known as the East End Grist Mills. (This building burned in January 1973 - then occupied by Thoman Tire.) This partnership dissolved about I895. As settlement he got part of the mach- Ivan M. Hilborn at the corner of Mill and South Streets with the Doctor's residence in background.
